> New Review of “Mad Hungry: Feeding Men and Boys” Just keeps getting better.

In follow-up to my recent article about this fabulous cookbook, in which I shared that Lucinda Scala Quinn introduces us to a way of life, one where feeding a ravenous family — without picking up the phone for takeout — can be quick, fun and delicious. The latest recipe that I tried is another success! ~ Vinegar Glossed Chicken ~ This easy and delicious recipe has been in heavy rotation at Lucinda’s home for at least 20 years. And after making it for my guys I can see why. Here is her presentation, which is beautiful. Mine? Eh, not so pretty.

The first thing I loved about this recipe is the simplicity of the ingredients – just 7. The only thing I had to buy was the chicken. Though the ingredients are simple, once cooked, they magically combine into a delicious sort of sweet and sour syrup that permeates the chicken. It’s a wonderful combination of textures and flavors. Served with polenta, it was an instant crowd pleaser. Even my picky 6-year old son loved it. Not an easy accomplishment! Another recipe that was a life-saver for me is the  “Chicken Broth Elixir” which Lucinda refers to as “EDIBLE MEDICAL”. I had been sick for four weeks, hoping and assuming that it would just “go away on it’s own” as it usually does. And on a side note, why is it that I rush my son to his pediatrician at the first sign of a sniffle and book doctor’s appointments for my husband but I walked around for FOUR WEEKS feeling like death warmed over? I think we need an official “Mom Day” where all mom’s are required to fully focus on themselves and their needs. Anyway, I digress. Back to the edible medical broth that had me feeling better in just three days (without the “rest” that Lucinda recommends). Just six simple ingredients (one being salt) it contains antibiotic properties that gently restore your strength and cleans out toxins as you sweat. Genius! If you knew how “scared” I’ve been of the kitchen since marrying my non-professional “Chef” you would understand how thrilled I am to have these tools to give me the confidence to cook again. Trust me, if I can make these recipes – you can too!

Although I have never met Lucinda in person, (well we do tweet sometimes!), from one mom to another, I feel a unique bond between us. Thank you Lucinda!

I’m excited to try this recipe! I love the simple ingredients and it looks and sounds amazing – thanks for sharing this recipe with us. I’ll let you know how it turns out although I fear I can’t compete with the “presentation” either.
